Christmas Carrot Cake
A fun way to dress up the old favourite, carrot cake.

Grand Carrot Cake | 750 g |
Sunflower oil | 100 g |
Water | 100 g |
Glucose | 100 g |
Carrots | 350 g |
Grated fresh ginger | 50 g |
or ginger powder | 25 g |
Lime zest | 2 limes |
Lime juice | 2 limes |
Preparation
With the flat beater mix all the ingredients together (apart from the carrots) for 3 minutes at medium speed.
At the end of mixing add the carrots and continue mixing for 2 minutes.
Poor the mixture either in a cake mold or a paper form. Fill up to the middle.
Bake at 150°C for 50-60 minutes.
Decorate with Dip white and Digestive cookies.
