Preparation
Mix all the ingredients together at low speed for 3 minutes and then at high speed for 5 minutes, until you get a well developed dough of 26-27˚C temperature.
Let the dough rest for 5 minutes and cut into pieces of 1.800 gr.
Mould into a round shape and let the dough rest (covered) for 10-15 minutes.
Cut the dough into 30 pieces of 60 gr each and shape.
Decorate with sesame.
Proof (±35 ˚C with moistness) the dough for 50 minutes.
Bake without steam at 240˚C for 10-12 minutes.
