Preparation
Place all the ingredients in the speed mixer and knead until an elastic dough is formed.
Rest the dough for 5 minutes.
Cut the dough into 120-150 gr and round it.
Rest the balls for 30 minutes and shape.
Place the filling of your choice in the center and close.
Sprinkle with ingredients of your choice.
Place in the stove for 40 minutes at 37°C with 75% humidity.
Bake at 220°C for 18-20 minutes.
Tip
For more variety, you can add regato or another cheese of your choice to the dough.
