Genoise 2.000 gr
Eggs 1.500 gr
Water 250 gr
Glucose 200 gr

Preparation

    Mix all the ingredients together with the wire whip at low speed for a while and then at high speed for 6 minutes (fast mixer) and 10 minutes (slow mixer). The mixture you get should have a perfect and fluffy dough consistency.

    Spread the mixture onto a parchment paper.

    Bake at 200oC for 5-8 minutes.

The mixing duration should not be more than 10 minutes.

You can add colouring or various flavours to your mixture to create multicoloured Swiss rolls.
