Fruit & Nuts Loaf

A combination of plums, raisins, orange and walnut.

Butter 99,9% 400 g base ingredients
Eggs 200 g base ingredients
Yeast 320 g base ingredients
Water (moderate temperature) 800 g base ingredients
Sugar 200 g base ingredients
Cinnamon 20 g base ingredients
Orange shavings 20 g base ingredients
Lemon shavings 20 g base ingredients
Rum 20 g base ingredients
Plums 150 g filling ingredients
Raisins 150 g filling ingredients
Orange 100 g filling ingredients
Walnuts 50 g filling ingredients

Preparation

    Mix all the base ingredients together at low speed for 5 minutes. Add the fruit during the last 2 minutes and keep mixing.

    Allow the dough to rest for 20 minutes, once you have covered it with plastic sheet.

    Cut the dough into 50 gr portions (small loaves) or 300-350 gr (large loaves).

    Proof (±35OC/60% moistness) for 35-40 minutes.

    Coat with egg wash or Ovex Powder-ZK (egg wash replacer).

    Bake at 200-210OC without steam for 20-25 minutes.

    Sprinkle with Mont Blanc (white sugar in powder form, non water soluble) and cinnamon.
